Tri-Tip

Cut from the sirloin, the tri-tip, sometimes referred to as California's cut or Santa Maria steak, is the very "tip" of that sirloin. Rumor has it, in the 50's, the owner of the Santa Maria market, located on the central coast of California, introduced his patrons and visitors to this meaty, juicy, full of flavor cut. From that point forward, the tri-tip's popularity has only grown and spread! This is best enjoyed with a spice rub, cooked to medium rare, sliced thinly against the grain, and OH MY GOODNESS, is it good!!  (Dry Aged 30 days)
